Welcome to the Levant, a region encompassing the lands lying on the eastern Mediterranean shores, roughly corresponding to modern-day Israel, Jordan, Lebanon, Syria and Cyprus. From the French verb lever, “to rise”, its name is a nod to its eastern location, the place where the sun rises. And the sun is certainly rising on the Levant. Whilst historically seen as a centre of trade, the Levant is beginning to achieve recognition for its unique cuisine and wines. 

The Northern Golan, where we have chosen to plant our first vineyard, boasts a Levantine terroir, given its close geographical proximity to the region. Our aim is for our wine to stand alongside other wines of the region, for it to join the diverse array of sun-soaked Levantine flavours. 

We firmly believe that wine is an absolute manifestation of the vineyard, each sip a representation of the soil type, micro-climate, and terroir in which the grapes were grown. This belief fuelled our extensive search for the most optimal land in Israel, leading us to an inimitable parcel of land in Moshav Sha’al, located in the ‘sweet spot’ of the Golan. With fields situated between 850-950 meters above sea level, its height, combined with its rich mineral soil, renders this a truly spectacular terroir. The deep soil is paired with proper drainage, whilst residues of volcanic magma rock embedded in the soil enriches the wine’s flavour. Our vineyard is south sloping, allowing our grapes to absorb an even amount of sunlight throughout the day, resulting in a balanced fruit. Finally, the Golan’s pure seasons, with blazing summers and bitter winters, gives the grapes exactly what they need to grow in the healthiest way possible. 

Our hope is that each bottle from Family Baum Winery will be a portable expression of Moshav Sha’al, that each glass will transport you to our beautiful Levantine landscape.
